Chef Staib presents a variety of healthy recipes to make in the New Year to help keep that healthy eating resolution on track.

He is making a gluten free turkey wrap with Dietz & Watson turkey, which is lean and low in fat and sodium, but full of flavor.

It’s brimming with fruit that has vitamins and nutrients, and it’s packed with protein to keep you fuller for longer. Leaving the skin on the apples adds crunch and color to the mix, but it also adds fiber to keep you full.

Gluten Free Gourmet Turkey Breast Wrap

Serves 4

Ingredients

  • 4 large gluten free tortilla wraps
  • Dietz & Watson® Zesty Sandwich Spread
  • 2 pound Dietz & Watson® Gourmet Lite Turkey Breast, shaved
  • 8 slices tomato (about 2 large tomatoes)
  • 1 tablespoon Dietz & Watson® Hoagie Dressing
  • 2 cups sprouts
  • 2 avocadoes, seeded and sliced thin

How To Make

  1. Lay tortilla flat
  2. Spread Dietz & Watson® Zesty Sandwich Spread on half of the tortilla.
  3. Pile ½ pound Dietz & Watson® Homestyle Turkey Breast on the half of the tortilla nearest to you.
  4. In a medium bowl, toss the sprouts in the Hoagie dressing to cover.
  5. Shingle avocado slices on top, then top with 2 slices tomato, sprouts on each tortilla.
  6. Holding filling tightly, begin rolling the tortilla around filling moving away from you.
  7. Stop half way & fold in both sides, making sure the remainder of the tortilla is the same size as the rolled portion.
  8. Continue to roll until tortilla is packed tightly.

Turkey Apple Salad  

Serves 4

Ingredients

  • 2 Granny Smith apples, diced
  • 1 pound Dietz & Watson® Homestyle Turkey Breast, cubed
  • 1 pineapple, peeled, cored and cubed
  • 1 cup grapes, halved
  • 1 cup snow peas
  • ½ cup walnut halves, toasted
  • ½ cup plain yogurt
  • Pinch curry powder
  • Salt and pepper, to taste

How To Make

  1. In a medium bowl, combine curry powder and yogurt.
  2. Add the rest of the ingredients in a large bowl and toss to combine and for yogurt to cover all ingredients. Season with salt and pepper.

 

Apple Curry Crostini

Serves 12

Ingredients

  • 1 cup arugula
  • ½ lemon, juiced
  • ¼ cup plain yogurt
  • 4 Granny Smith Apples, skin on, cut into 1/8-inch cubes
  • 1 pound Dietz & Watson® Yellow Cheddar Cheese, cubed small cut into 1/8-inch cubes
  • Pinch curry powder
  • Salt and white pepper, to taste
  • 2 baguettes, thin sliced and toasted to make crostini
  • Fresh parsley, for garnish

How To Make

  1. Combine yogurt, mayo and lemon juice in a large bowl. Season to taste with curry powder, white pepper and salt. Mix to combine.
  2. Add apples, cheese and walnuts. Mix to combine.
  3. Lay an arugula leaf on the crostini
  4. Spoon about 1 heaping teaspoon of mixture on top of arugula on each crostini
  5. Garnish each crostini with a sprig of fresh parsley
