What's Cooking on 1060: Panorama Celebrates 25 Years

PHILADELPHIA (CBS) -- A local restaurant is celebrating a quarter century in business with a new cookbook.

So what does it take to be a mainstay in the Philadelphia restaurant industry?

Matthew Gentile, the new executive chef at Panorama restaurant in Old City, says you have to stay relevant. That's one of the reasons he was brought in.

"The idea is that we're trying to utilize modern cooking techniques more," Gentile says, "and reinvigorate classic recipes."

Panorama is celebrating 25 years in business. That's no small feat for a restaurant, and Gentile says they're marking the occasion by releasing a cookbook called "Panorama -- Napoli to Philadelphia."

"The cookbook is about the entire history almost of the restaurant, just in cookbook form," he says. "It starts out with maybe spaghetti with garlic oil. It really delves into the past of the restaurant, and then we have different things like broccoli rabe salad with prosciutto vinaigrette that you wouldn't have seen in the past."

He says one thing folks might not know about Panorama is that they hold the Guinness Book world record for the largest wine preservation system in the world.

"Basically, it's a curvinent system that you plug in bottles of wine and it preserves it so if you open a bottle of white wine, the next day, it usually isn't very good, but with a curivenet system, you have that bottle of wine for an extended period of time. We can offer up to 150 glasses of wine at any time by the glass."
