Recipes For Tasty Wings

PHILADELPHIA (CBS) -- The following are three recipes for wings that you can serve at a party for the big game.

Cider brined wings with a pumpkin beer gastrique:
Wing brine:
4 cups water
2 cups salt
4 sprigs thyme
4 pepper corns

Bring to a boil. Take off the heat and add 8 cups cider, 4 cups ice and 3 pounds chicken wings. Let it soak overnight. Pat wings dry and fry at 350 degrees until crispy (about 10 minutes) and have reached 165 degrees internal temperature.

Pumpkin beer gastrique:
1 cup sugar
1/2 vinegar cider
1/2 cup water
3 cups chopped pumpkin or butternut
1 cup dark malt beer
juice of two lemons

Combine sugar water vinegar and pumpkin and cook till soft. Purée in vita mixer then add beer and lemon juice. Toss fried wings in gastrique.

Vietnamese fish sauce wings
1/2 cup Asian fish sauce
1/2 cup sugar
2 garlic cloves crushed
Juice of 1/2 lime
3 lbs chicken wings
1 cup cornstarch
2 garlic cloves minced
1 tsp each basil, mint , cilantro

Whisk together fish sauce, sugar, crushed garlic and lime. Toss wings and let marinate for 3 hours, turning occasionally. Sauté the minced garlic in a little oil until it turns golden and remove and strain on a towel. Pat wings dry and coat in cornstarch reserving the marinade. Fry at 350 degrees until crispy (about ten minutes) and have reached 165 degrees. While frying reduce the marinade to syrup-like consistency. Toss fried wings and garnish with fried garlic and chopped herbs.

3 Hawaiian Chicken Wings
3 lbs wings
1/4 cup sugar
1/2 teaspoon ginger powder
1/2 teaspoon garlic powder
1/8 cup chopped scallions
1/4 teaspoon black pepper
1/2 cup soy sauce
6 ounce pineapple juice
1 piece of Spam, crumbled, for garnish (optional)

Combine all ingredients, except for spam, and marinate overnight. Bake at 375 degrees for an hour until wings have reached 165 degrees. Garnish with some sautéed crumbled Spam.
