1 small onion, chopped
1/4 cup chopped green pepper
1/4 cup chopped sweet red pepper
1/4 cup white kidney beans
1 cup sliced mushroom
1 tablespoon vegetable oil
1lb skirt steak
3/4 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup cheddar cheese sauce
1/2 diced tomato
chopped parsley

1. Season skirt steak with salt & pepper and grill over an open flame for 1 minute on each side. Cool and slice into small bite size pieces.

2. In a small saucepan, sauté the onion, mushroom and peppers in oil until tender. Add the skirt steak and kidney beans into the saucepan; cook over medium heat until meat is no longer pink; drain. Stir in the cheese sauce, chili powder and seasoning. Reduce heat; simmer, uncovered, for 5 minutes or until thickened. Sprinkle with diced tomato and chopped parsley.

3. Serve in a small bowl over a piece of a hoagie roll.
