Beyond The Turkey Sandwich: Thanksgiving Leftover Ideas

PHILADELPHIA (CBS) --  Thanksgiving has come and gone, but what to do with all the leftover food?

Bank and Bourbon chef Thomas Harkins recommends a twist on the old turkey sandwich by piling up some turkey, gravy and cranberry sauce on a some good thick bread dressed in Dijon mustard and mayonnaise.

"And then I open-face it and broil it and make it like a grinder in the oven with a little bit of cheddar cheese on top," Harkins told KYW Newsradio.

If you want something sweet and you have a lot of Thanksgiving bread left over, Harkins says you've got options.

"You could always make bread pudding. You need a ratio of a quart of cream to 6 eggs, sugar, cinnamon, nutmeg. Take your bread, cube it, hopefully it's a day old, toss it in that custard, but it back in a baking vessel, top it with some cinnamon and sugar and bake it in the oven at like 375 degrees for 40 minutes until it sets. Cut it in squares. When it's warm or it's gooey, put it out, hit it with powdered sugar, you could hit it with caramel sauce, you could hit it with whatever you want!"
