Review: Prime Stache

I've enjoyed my share of meals and drinks at this friendly joint near WIP's Old City studios over the years. Try the rum-and-red-pepper cocktail, which, when combined with the twice-cooked Sriracha wings, will scald your tonsils. But I'd never gone burger, until now.

What was I waiting for? Start with a yellow bakery bun, which was soft and sweet. The meat is coarsely ground and flavorful, a plump patty that's packed with juices but charred enough not to drip. Toss on some sautéed onions, sweet and translucent. And the bacon was crisp as parchment paper, just the way I like it. I've never understood why anyone would order bacon any way but well-done but, hey, to each his own.

My only knock here would be the cheese. A great burger deserves better than American cheese. C'mon boys, perfection's the goal.

Prime Stache is owned by Eagles tight end Brent Celek. We wish Celek a continued successful run with the Birds. And when the day comes that it finally ends, we hope he continues slinging burgers and cocktails at Prime Stache.
