Gridiron Grub: Southwestern Guacamole

One of the best snacks to munch on during a football game is guacamole. A sweet-and-spicy take on this typical avocado delight is guaranteed to please a rowdy crowd. This hearty recipe will kick off your football party right. No need for lengthy instructions here, this recipe is easier to follow than John Madden’s commentary. And what's better is you can quickly assemble it in the parking lot of the stadium to serve it in its freshest state. Dip into this spicy guacamole recipe for all your game-day celebrations.

Southwestern Guacamole
Prep Time: 10 minutes
Difficulty Level: Easy
Yield: One large bowl

Ingredients:

  • 5 avocados
  • 2 Jalapeño peppers, diced
  • 1 Serrano chile pepper, diced
  • 1 can of sweet yellow corn
  • 1 can of rinsed black beans
  • 1 head of cilantro, chopped fine
  • 1 lime
  • Salt and pepper to taste

Directions:  

Cut the avocados in half, lengthwise from the top. With a large, wide knife, take one good whack into the pit, twist and remove. Scoop the meat of the avocado from the shell and cube or slice into strips for easy mashing. Then mash the avocados. You can use a fork, a mashing utensil or two large spoons. Next, add the salt, pepper and fresh-squeezed lime juice to mashed avocados. Toss in the remaining ingredients and stir until combined. Do not mix too much or the dip will lose its chunky texture. Now dip in a tortilla chip and enjoy!
