Action AIDS, "Dining Out For Life"
Dine out, fight AIDS.
That is the goal of the 21st annual "Dining out for Life" which takes place April 28th. Dozens of restaurants and thousands of diners across the Delaware Valley will join together in the fight against HIV/AIDS.
Kevin Burns, the executive director of Action AIDS, and Guillermo Tellez, the chef at Square 1682 at Hotel Palomar stopped by Talk Philly to discuss the event.

Here is how you can make chilled clear gazpacho:
Yield 6
15 large Roma tomatoes, (very ripe) chopped
2 tablespoon(s) kosher salt
2 piece(s) chipotle pepper in adobo, available in specialty stores (optional)
1ea cucumber, peeled and chopped
2ea garlic cloves peeled
1ea celery stalk, chopped
6ea scoops of pineapple-basil sorbet, ( optional)
Trims and ends from the pepper garnishes below
Garnishes
2 heirloom tomatoes peeled, seeded (save the seed gelee) and diced ¼ inch
1/2 yellow bell pepper, peeled, seeded, and diced ¼ inch
1/2 yellow bell pepper, julienne very thin
1/2 red bell pepper, peeled, seeded, and diced ¼ inch
1/2 red bell pepper, julienne very thin
1/2 cucumber, peeled, seeded, and diced ¼ inch
1/2 cucumber, peeled, seeded, and julienne very thin
1/2 ea zucchini skin julienne very thin
2 jalapeño peppers, seeded and cut in fine brunoise
1 medium jicama, peeled and diced ¼ inch
2 stalk(s) celery, peeled and diced ¼ inch
Salt
Pepper to taste

Directions;
For tomato water, wash and dice tomatoes and season heavily with salt.
Add 1 piece chipotle pepper and process with a hand blender or a food processor. Place in a colander lined with cheesecloth, Let sit overnight. Chill in freezer before serving,
Combine all julienne vegetables for garnish together with some olive oil, season with salt and pepper. Press into a ring mold and set aside.
Place the julienne vegetables in the center of six serving bowls, add the diced vegetables around the molded julienne vegetables, and Pour tomato water around the vegetables, add pineapple- basil gelato, garnish with micro basil.
*this is a great soup for warm days and can be served with shellfish and avocado.
