Philadelphia Restaurants Making It Easier To Eat Healthy

By Hadas Kuznits

PHILADELPHIA (CBS) -- As folks make their healthy eating resolutions, it seems the Philadelphia restaurant industry are making it easier for folks to eat well.

Vegan food chef Christina Pirello says over the past three decades, she's watched the popularity of vegan and vegetarian food slowly grow in Philadelphia.

"I think 2016 is going to be the year that we see a great explosion. I think we're at our tipping point," said Pirello.

What's different about this year?

"This year what's happening is it's becoming more convenient. Everybody's moving toward fast, healthy casual," said Pirello.

She says there's been a huge growth in so-called healthy chain restaurants.

"Much to my delight, Philadelphia's becoming this amazing healthy food hub," said Pirello.

And higher end restaurants are highlighting the vegetables as opposed to concealing them to look like a meat dish.

"We are moving in the direction of people being much more vegetable conscious," said Pirello.

Meanwhile, Pirello is expanding her business.

"We're opening a leg of Christina Cooks called Christina Bakes," she said.

Pirello has developed a line of plant based cookies that substitute refined sugars and flours with brown rice syrup and coconut sugars.
