Dom's Feast Of The Seven Fishes

Pat Ciarrocchi shared her mushroom salad recipe in association with Dom Giordano's Feast of the Seven Fishes.

In the spirit of celebrating the Mushroom Capital of the World -Kennett Square, PA -- here is a recipe that is better when made ahead of serving your guests and looks beautiful on your buffet table.

An important first step is finding fresh mushrooms -- white, firm, with the stems tight to the cap. You can choose smaller button mushrooms that you don't have to slice or mid-size that you can quarter. A note - when you par-boil them, they will shrink a little.

Ingredients:

6 pounds fresh mushrooms

1/4 cup green pepper

1/4 celery

1 cup green stuffed olives, sliced

1/2 cup ripe olives, sliced

1 heaping tsp. onion, diced

1/8 tsp. oregano

salt

olive oil

white wine vinegar

Steps:

Cup up mushrooms. Rinse, place in boiling salted water. Bring to full boil, remove and drain.

Put mushrooms in white vinegar and salt solution. This will keep the mushrooms white. Let stand for 15 minutes. Then, drain.

Add in peppers, celery, olives, onion and seasonings, including oil.

Mix and chill.

My mother would always say a little prayer over the mushroom salad, blessing it and asking that it be "tasty." That could be the secret ingredient.
