Monday on Talk Philly, Chef Staib presented a delicious salad with a few super foods on behalf of Deborah Heart & Lung Center. The salad featured apples, yogurt and blueberries – a color array of healthful ingredients.

Late Summer Superfoods Salad

Serves 4

2 Granny Smith Apples, peeled and julienned

1 cup celery root, peeled and julienned

½ cup fresh blueberries

1 3-ounce boneless skinless chicken breast, poached and cubed

½ cup fat free plain yogurt

1 lime, juiced

Freshly ground pepper

½ cup walnuts, toasted

Radicchio, for serving

In a large bowl, combine apples and celery root, chicken breast and blueberries. In a separate bowl, stir together yogurt and lime juice to make a dressing. Season to taste with freshly ground pepper.

Pour the dressing over the salad and toss to combine.

To serve, place salad in radicchio leaves to make a cup. Top with toasted walnuts just before serving.
