Salmon Livornese

1 fresh salmon filet
4 black Sicilian oil cured olives
1/2 fresh chopped tomato
1/4 fresh chopped onion
3 sprigs fresh chopped parsley
1/2 cup of tomato sauce
1/3 cup white wine
1/3 cup vegetable stock
1tbsp butter
1 tsp flour
3 tbsp olive oil
2 cloves of garlic
Salt and pepper to taste

Pan sear salmon for 3-5 minutes on skin side transfer to oven at 350 on skin side bake until desired temperature

Sauce prep:

Heat up medium sized sauce pan
Add olive oil and garlic
When garlic is golden add onions and olives
Sauté for 1-2 minutes
Add fresh tomatoes
Sauté additional 3 to 5 minutes
Add white wine and vegetable stock
Simmer for 1 minute
Add tomato sauce
Roll butter in flour and add to mixture
Continue to sauté until sauce is thickened and butter is melted
Add salt and pepper to taste
Finish with chopped parsley
