Harvest Chicken Salad Recipe

All parents know that packing a lunch is the best way to make sure children get nutritious, healthy meals, and the same goes for parents too! This recipe appeals to adults' tastes and are much healthier than going out for lunch.

Serves 4 to 6

1 pound Dietz & Watson Gourmet breast of chicken, diced
4 large pears, peeled, cored and thinly sliced
6 ribs celery, chopped
1 cup grapes, halved
Juice of 1 large lemon
2 tablespoons sour cream
¼ cup reduced fat plain yogurt
¼ teaspoon Worcestershire sauce
1 pinch curry powder
½ cup chopped walnuts

Salt and freshly ground pepper

1. Toss together the chicken, pears, celery and grapes in a large bowl.
2. In a small bowl, stir together the yogurt, lemon juice, Worcestershire sauce, sour cream and curry powder to make a dressing.
3. Combine dressing with chicken mixture and toss to coat thoroughly. Season with salt and pepper and fold in the walnuts just before serving.
