PHILADELPHIA (CBS) – Philadelphia’s Washington Square West neighborhood gets a new BYOB restaurant.
Josh Lawler is the chef and owner of The Farm and The Fisherman:
“The style is New American, lots of local ingredients, really driven by the local seasons and what’s available at the local markets.”
He says this is his first restaurant, “I guess it’s always pretty much every chef’s dream to open their own place someday and really let you do what you want to do.”
Lawler says there is quite a difference from going from employee to owner, “I guess the business aspect is the biggest part, and the management of the staff. My last job I managed a large staff, over 20 people – but here I’m hiring, training, doing all the paperwork, all the sourcing, all the cooking, some of the construction.”
Lawler runs the restaurant with his wife. He says now that they work together, they can finally spend some time together.
